Suong noodles

I made the kind of noodle for a very long time ago. I took these pictures, and I did not write the recipe. How lazy I am? I am thinking about this noodle for today, and realize that I did not save my recipe. That is why I am doing it. "Suong" is made from shrimp paste.

Ingredients:
For the soup (you can see my vegan broth recipe here)
An Fuji apple
1 fiber melon
1 sweet dried radish
4 litter water
10 gr rock sugar
black pepper
For the Suong: 
1 lb shrimp
2 tbs very cold water (Put some ice in a cup of water, and we get ice water)
1 + 1/2 tbs fish sauce
1/2 tbs sugar
1/2 tbs potato starch
1/2 tsp ground black pepper
1/2 tsp baking powder

Others
1/2 tbs of oiled annatto seeds (for color)
1/4 cup peanut
2 tbs minced garlic
green onion
Direction:
Making soup:
- Peel of the skin of the fiber melon and the apple. Cut peeled fiber melon, peeled apple, and sweet dried radish into medium pieces. Put them into a big pot, and pour water into the pot. Cook it on medium high heat for 1 and a half hour.
Making shrimp paste:
- Mix all shrimp paste's ingredients well, and let them in the freezer for 30 minutes. 
- Put it into the food processor, and pulse 30 seconds. Take the paste out and place it in the fridge 30 minutes.
Making the others:
- Frying garlic: heat the sauce pan on medium heat. Pour a little of oil  and minced garlic into the saucepan. Stir it till the garlic becomes yellow.
- Frying peanut: put the peanut on the plate, and place it into the microwave. Heat the peanut 1 minute, turn the peanut over. I call it a circle. Repeat the circle 3 times or till your peanut is fragrant. (How many times should you repeat is according to your microwave's power).
- Take the skin out, and put peanut into the zip lock bag, I use the rolling pin to grind the peanut.
- Making oiled annatto: pour 1/2 tbs oil into a small bowl, and 1 tsp annatto seeds. Place the bowl ito the microwave, and heat it for 1 minute.
- When the soup is done, use the spoon to scoop the shrimp paste and out it into the soup. When the shrimp paste floats, it is time to eat hehehe.
- Place the rice noodle into the bowl, and then put on its' top fried garlic, ground peanut, green onion, and shrimp paste. Pour the soup into the bowl.

Done!!!! Serve it with Hoisin sauce and chili sauce.
